Asian Broccoli Chicken

Bad Photo of a GREAT Dish!

My sister sent me an e-mailed entitled “The BEST Asian broccoli chicken recipe ever” a couple of days ago. She is right! This recipe is incredible and incredibly easy. This recipe is great on it’s own but would be very tasty if paired with Savory Cauliflower Fried Rice.

INGREDIENTS

1 1/2 lbs chicken cut up into cubes
1/2 white onion sliced into strips
3-4 tbs minced garlic 1 red chili pepper diced small (or 1 – 2 tsp dried)
1 head broccoli cut into florets
1/2 cup cashews
1/2 cup sliced mushrooms
2 tbs walnut oil
1 tbs olive oil
2 tbs cashew butter or almond butter
3 tbs tamari sauce

 

DIRECTIONS
1. Heat up your oils over medium heat add onion, garlic and red chili peppers and let fry until fragrant.

2. Add chicken and cook until no longer pink (about 5 – 7 minutes) ~at this time you should nuke your brocolli in a tbs of water for about a minute to cook it up a bit.

3. Take everything out of the pan, bring the heat down to low and add the cashew butter and tamari sauce together into the same pan ~this will pick up all the bits that were stuck to the pan.

4. Once totally combined, add back your chicken and add your brocolli and mushrooms to cook for about 2 minutes.

5.  Add your cashews and mix with sauce

6 Serve and enjoy!
