Keto Big Mac Salad

I saw this on Facebook last week and suddenly a huge craving for a McDees Big Mac hit me. Years before I went Paleo and now Keto-Paleo, fast food was my emotional crutch and Big Macs played a part of that. Now I’m dealing with issues from the past in a positive way and get to enjoy the my “Healthy Big Mac”.

On the BRIGHT Side

Went to my optometrist yesterday to get some new glasses and saw this wonderful reminder to “Always look on the BRIGHT side of life” in his office.

Love his positivity but hate that he reminded me that due to the “number of candles of my cake” a stronger prescription is required.

With both in mind, I’m grateful that I’m on my way to ensure that my 40’s are going be great because of clean eating, increased exercise and self love.

It’s a Physical, Emotional & Spiritual Journey


My transformation is not only physically but emotionally and spiritually. My weight loss journey includes God. Last night I had a wonderful time with my two friends at a TobyMac concert. Three years ago if anyone would have told me I’d suggest going to a Christian concert, I wouldn’t believe them…I LOVED it!

ACCOUNTABILITY POST: Yesterday and today were pretty good workout days despite my swollen foot. Thankfully I’ve got my follow up appointment this week…Sure am hoping it’s not another health obstacle

Faith, Fitness & Weight Loss Goals


I’m still aiming for my short term goal of breaking the 300 lbs mark and am confident that it’ll happen next week. Next up is a 5 month goal to get to 250 lbs in time for my summer road trip in July.

Keto: Sunday Quiche with Cheese Bread

Keto-Brunch is served! I made one pan quiche & paired with Bread Cheese that I lucked out and found it 1/2 off! Yeah!

Home Water Station

I want to up my water intake so I took out my Christmas drink dispenser that I bought on clearance for $5, grabbed some lemons and mineral water will soon have a “water station”. Not only will I remain hydrated but my body will naturally be getting rid of toxins. Win-win!

SUPPER’S READY: Morrocan-Style Chicken Recipe

It may not look very good or heck, even sound very good but it is! I first saw this dish at a friend’s wedding and thought the combination was weird but with some coaxing, a spoonful landed on my plate and I discovered this odd blend of flavors actually works.

Unlike other recipes for Moroccan chicken, this recipe is easy. I’ve completely simplified it to the point that only a few ingredients are required; chicken thighs, broccoli, green olives, garlic powder, cumin, mayo, salt & pepper and cooking fat of choice.

COOKING INSTRUCTIONS:
1.Add your cooking oil to a cast iron pan, salt and pepper your chicken thighs and add them to your pan.
2. Cook on each side for three minutes.
3. Place covered cast iron in preheated 350° for 30 minutes.
4. Cut and wash broccoli before steaming. Remove when tender and drain.
5. Add a whole bunch of cut olives to broccoli and mix in desired mayo and 1 tsp of cumin.
6. When chicken thighs are fully cooked, place beside broccoli mixture and ENJOY!

TIP: For more flavor add cilantro, ground ginger, turmeric.
