Move over IHOP, this homemade Mexican omelet is da BOMB! I used some extra stuffed pepper meat to fill this three egg omelet and added cheddar cheese to make this a breakfast to make anyone smile!

Had a huge craving for cheesy pizza but didn’t feel like taking the time to make a keto-paleo crust…so eggs it is. YuM! Craving satisfied!

Keto Big Mac Salad

I saw this on Facebook last week and suddenly a huge craving for a McDees Big Mac hit me. Years before I went Paleo and now Keto-Paleo, fast food was my emotional crutch and Big Macs played a part of that. Now I’m dealing with issues from the past in a positive way and get to enjoy the my “Healthy Big Mac”.

Keto-Paleo Food Diary

Eating was on point except for one thing…not pictured is the whole pint of Halo Top ice cream I ate -24 grams of sugar and 280 calories. Less snacks tomorrow!

A Budget’s BFF: Turkey

Whoever said that turkeys were just for Thanksgiving and Christmas, never had to live on a budget!

Several resolutions were made for 2017. Keeping on tight grocery/dining out budget in order to save up money for a family road trip to my hometown this summer was one of them.

That means that meals are planned around that week’s sales flyer, items on clearance are bought and taking out the turkey that was bought on sale this past Christmas to ensure that February’s budget is close to target happens!

This week’s suppers:

Monday- Roasted turkey, Paleo Dressing Balls and a simple salad.

Tuesday- Hubby’s Birthday Leftovers (ribs, bacon Brussels sprouts and honemade sweet potato fries).

Wednesday- Sliced turkey, slow cooker green beans and salad.

Thursday- Roast beef, green beans and salad.

Friday- Homemade Turkey soup.

Saturday- Campfire hotdogs and veggies.

Sunday- Hamburger salad and/or leftovers.

Keto: Sunday Quiche with Cheese Bread

Keto-Brunch is served! I made one pan quiche & paired with Bread Cheese that I lucked out and found it 1/2 off! Yeah!

Accountability Post: Doing the best I can.


The kids and hubby were home today, all sick so getting steps in was hard. I didn’t reach my goal but tried my best. No guilt here!

SUPPER’S READY: Beef & Broccoli Recipe

I found a simple, yet tasty, Broccoli & Beef recipe on Paleo Leap today that I doubled…The best part is that it’s a slow cooker recipe that took 5 minutes to put together!

KETO TIP: It’s a little high on sugars, so for those of us doing Keto-Paleo, just half the honey and apple.
