KETO DESSERT: Peanut Butter Buckeye’s

BEST EVER KETO TREAT: In my books there’s no better combination than peanut butter and chocolate. PERFECT PAIRING! I stumbled upon Kayla Does Keto’s recipe for Keto Buckeyes a few weeks ago while on YouTube and it’s been my main treat since.

PALEO TIP: This works with all nutty spreads. My husband is 100% Paleo and I make this with Sunbutter for him.

Tonight’s supper was Super Easy Tandoori from Nom Nom Paleo topped with Chocolate Ice Cream from Halo Top. SuPeR yUm!

National Pizza Day


HAPPY NATIONAL PIZZA DAY! We made two different pizza crust recipes…and sadly because I didn’t have cream cheese and almond flour, KETO FAT BREAD wasn’t one of them._

We made a standard CAULI CRUST (2 cups shredded cauliflower florets, 1 egg, 1 cup parmigiano cheese) and a PALEO COCONUT FLOUR CRUST. The coconut crust was the winner!

SUPPER’S READY: Baked Tuna Stuffed Avocado

I’m so sad, tonight’s the last night for avocado meals. I keep seeing baked avocado and egg recipes on social media, so I decided to try Baked Avocados stuffed with tuna salad. It turned out much better than expected and will be made again when the next big avocado sale happens!_

BAKED STUFFED AVOCADO: Make tuna salad the way you prefer, stuff avocados. Bake at 375 for 15 minutes. Top with cheese if you’re Keto…pairs well with hot sauce and sweet pickles.

SUPPER’S READY: Fried Avocado Fries

Avocados went on sale 2/$1 last week, so that means that this week, a lot of meals will include this delicious, healthy fat. YEAH!

Yesterday, we ate Chicken Avocado Casserole (awesome!) and tonight, I paired a bunless bacon cheese burger with FRIED AVOCADO! To say this was a hit with the family is a complete understatement! It’s GREAT!

3-4 avocados, peeled, halfed & sliced
1-2 eggs
1.5 cups almond flour
1/4 tsp cayenne
1/2 tsp salt

Drag sliced avocado through egg before coating with flour mixture. Fry in coconut oil. ENJOY!_

You’ll be seeing lots of recipes this week calling for avocado…chicken & avocado casserole, fried avocado, tuna melt stuffed avocado, chocolate mousse avocado. Living on a tight budget requires getting creative with sale items…too bad avocados weren’t always on SALE!

DESSERT’S RECIPE: Keto Chocolate Chip Cookies

Sunday’s the day I meal prep for the week. Beyond lunches and suppers, I prepare for times when I crave something sweet – this is how I’ve stayed on track without “cheats” since January 1st.

This week’s Sweet Treats include:

1. Paleo banana bread for hubby (bananas were going bad).
2. Paleo apple tartlets for the kids (apples were getting soft).
3. Mini-Keto Buckeyes for me (found dark chocolate on sale).

AND these incredibly easy and tasty Keto Chocolate Chip Cookies from The Low Carb Diet. Yum!

BREAKFAST’S READY: Sausage Veggie Casserole

So glad that this sausage breakfast casserole was made last night in preparation of a very early morning swim meet. Now feet are up, belly is full and a movie is playing. HAPPY SATURDAY!

1 sweet potato, peeled and diced. $1
1 yellow onion, diced $1
1 red pepper, diced $1.75
1 pound sausage (I use Jimmy Dean Sage) $3.99
1 can of coconut milk $1.55
2 slices of bacon, uncooked and diced $1.25
8 eggs $2.50
Salt/Pepper/Garlic to taste
TOTAL= $13.04/8 = $1.63 per serving

1. Preheat oven to 375°. Cook sausage, drain juices and set aside.
2. Add sweet potato, onion, red pepper and bacon to pan and cook until sweet potato is tender.
3. Mix sausage and veggies together and add spices.
4. Add combination to greased 9 X 13 casserole dish and spread out evenly.
5. Add coconut milk to whipped eggs and pour on top.
6. Cook for approximately 30 minutes. ENJOY!

Left alone, it’s Paleo friendly. Topped with shredded cheese, it’s considered Keto.
