Paleo Breakfast: Pumpkin Pancakes

It has become a household tradition for Jon to make pancakes on the weekend. Yes, Jon is GREAT, he makes us pancakes! And since becoming Paleo, he’s been on a mission to find the best tasting pancake that falls in line with our lifestyle. We had a favorite and now have two favorites. The recipe for Pumpkin Pancakes was found in Practical Paleo by Diane Sanfilippo (BalancedBites.comand to say that it is delicious, somehow falls short. All family members will be satisfied by these.

Pumpkin Pancakes Ingredients

  • eggs
  • canned pumpkin puree
  • pumpkin pie spice
  • cinnamon
  • coconut oil
  • coconut flour
  • vanilla extract
  • maple syrup
  • salt

COOKING CHANGE: Jon cut the amount of pure maple syrup required in half and instead drizzled some on top. Next batch, he plans on omitting maple syrup all together and just using it for a topping.

SIDE NOTE: Triple batch them and make some quick to-go breakfasts for the week ahead or give yourself a break next weekend and freeze these.
