The recipe for Pumpkin Pancakes was found in Practical Paleo by Diane Sanfilippo (BalancedBites.comand to say that it is delicious, somehow falls short. All family members will be satisfied by these.

COOKING CHANGE: Jon cut the amount of pure maple syrup required in half and instead drizzled some on top. Next batch, he plans on omitting maple syrup all together and just using it for a topping.

SIDE NOTE: Triple batch them and make some quick to-go breakfasts for the week ahead or give yourself a break next weekend and freeze these.

Thanks Balanced Bites!
