Paleo Dessert: Cookie Dough Brownies

BE WARNED: Prepare to eat the most decedent brownie ever.

The minute your fork hits your mouth, you will forget all about the pricey ingredients and be transported to chocolate heaven where each forkful only increases your happiness. This is one of our special occasion desserts for a reason. Although the ingredients are costly, the results are more than worth it!

Make both the brownie and cookie layer together, use the cookie layer as a homemade ice cream topping, or leave the brownie naked and enjoy it on it’s own. Whichever way you decide to make it, I can almost guarantee you that this will become a recipe you make more than once. 🙂

INGREDIENTS

Brownie Layer

  • 4 oz Baking Chocolate, melted in 1 T Coconut Oil
  • 1/2 c Coconut Milk, 2 Eggs
  • 1/4 c Cocoa Powder, 1/2 t Baking Soda
  • 1/3 c Raw Honey, 1 T Arrowroot Powder, 1 T Vanilla
  • 1 c Coconut Butter

Cookie Dough Layer

  • 2 C Almond Meal
  • 1/2 t Sea Salt, 1/3 c Raw Honey
  • 1 t Vanilla, 3 T Coconut Butter
  • 3 T Coconut Oil
  • 1 C Enjoy Life Mini Chocolate Chips

*COOKING TIP:The first time making this, I kept it in the oven for 30 minutes and it came out drier than expected. Stick closer to 26 minutes.
