Coconut Curry Lamb & Beef Meatballs

Do you like curry? Do you like lamb? Are you looking for a new twist on traditional Easter dinner? Or do you just want a great tasting recipe that will leave your co-workers licking the bowl and your children asking for seconds?

This Curry Lamb Meatball recipe is beyond great and customizable to your taste buds. Don’t like lamb, than only use beef. Don’t eat meat (!!), the sauce is amazing and is perfect paired with Cauliflower Rice.

Meatballs
1/2 red onion, finely diced
1 lb of ground lamb
2 lbs of ground beef
1 granny smith apple, peeled & finely diced
1 tbsp curry powder
1 tbsp garam masala
1/2 tbsp salt
1/2 tsp ground pepper
1 tsp ginger powder
1 tsp garlic powder
1 egg, beaten

Sauce
1 tbsp tomato paste
1 tsp crushed red pepper
1 tsp salt
1 tbsp coconut oil
3-4 crushed garlic cloves
2 tbsp curry powder
24 oz strained or crushed tomatoes
1 can coconut milk
1-2 tbsp fish sauce

INGREDIENT CHANGES:

I didn’t have any canned crushed tomatoes, so I used Hunt’s Fire Roasted Diced Tomatoes and ended up blending the sauce in my food processor. The end result was a very smooth sauce that was mouth-watering delicious. We didn’t buy the Garam Masala spice, we made our own. It’s super easy! Click the words “Garam Masala”  in the ingredient list for the formula for the spice blend.
