Lazy Cabbage Rolls

When I was young, I hated cabbage! If cabbage was a part of dinner it would quickly get wrapped up in napkins when my Mom wasn’t looking or  thrown on the floor for my dog to eat. I hated cabbage and would spend a lot of time sitting at the dinner table trying to swallow the nasty vegetable but then things changed.

My Dad introduced me to homemade Cabbage Rolls and I loved them. Since then, I’ve tried my hand at making them but was left with a mess and broken leaves after spending time carefully rolling and tucking the meat mixture inside. Frustrated, it dawned on me to shred the darn cabbage and make things easier.

Introducing Lazy Cabbage Rolls!

The recipe is simple, take your favorite tomato meat sauce, add your favorite meatball (beef/chicken/turkey) and place both on a bed of shredded, fried cabbage.

1 head of cabbage, cut in half before cutting lengthwise, layers can easily be separated by hand
1 – 2 Tbsp of minced garlic (personal preference)
1 yellow onion, chopped
1 Tbsp of bacon fat

Cooking instructions:

  1. Heat pan on medium.
  2. Add bacon fat to heated pan.
  3. Add garlic.
  4. Once bacon fat is melted, add chopped onion and let them caramelize.
  5. Once onions are ready, add chopped cabbage.
  6. Stir frequently.
  7. Remove pan from heat when cabbage is soft and somewhat translucent.
  8. Add meatballs and tomato meat sauce.
  9. Enjoy!

Thanks Dad!
