A Tale of Two Pizza Crusts 

It is a truth universally acknowledged that most people love pizza, in fact, Americans consume 3 billion pizzas annually! But my family’s Friday Pizza Nights came to a halt  this past year when we began cutting out dairy. The kids and I no longer wanted to go to our local pizzeria. The bathroom side effects weren’t worth it. What’s the point of enjoying something for 20 minutes only to later spend hours in pain? In Paleo fashion, Fool’s Gold Friday was started, and pizza was forgotten. Until this past week, while on one of my favorite sites (Just Eat Real Food), a recipe for Paleo pizza crust was posted. The next day, a friend told me about a pizza crust made from cauliflower and egg.

Two types of Paleo pizza crust, spread out over two nights and my house is split down the middle. Both recipes offer very different tastes and textures. The eggplant crust is my favorite, however the cauliflower crust is easily customized to your spice preferences and would make an awesome wrap.
