Paleo Onion Rings

Before Paleo, I would get in my car and think nothing of ordering a hamburger and onion ring. I would park my car, quickly eat my cheeseburger but slowly savor my side of onion rings. When done, I would put together the evidence of my impromptu craving and dispose of it at a store. Yes, I am a recovering food addict and although many things have changed and are changing, my love of onion rings remain.

While my parents were here, I bought ‘Paleo Indulgences‘ by Tammy Credicott . Today was the first time I used not just one, nor two or three but FOUR recipes from it to make supper. I first noticed her recipe for Bacon Burgers on Maple Pancake Buns and then I turned the page and what did I see? ONION RINGS!! 🙂

I paired these tasty rings of joy with her Fry Sauce and am in love! The onion rings turned out AMAZING and the sauce, well, the sauce was almost licked off the plate.

ONION RINGS:
1/4 cup of almond flour
2 TBSP coconut flour
1/4 cup arrowroot starch
1/4 tsp paprika
1/2 tsp granulated garlic
1/8 tsp turmeric
1/2 tsp granulated onion
2 eggs
1/2 cup of canned coconut milk
2 yellow onions, sliced thin into rings

Coconut oil for frying.

FRY SAUCE*
2 TBSP Mayo
1/4 cup ketchup
1 clove garlic
1 TBSP olive oil
1 tsp apple cider vinegar
2 TBSP, finely chopped yellow onion
1 tsp yellow mustard
Pinch of Cayenne Pepper
Sea Salt & Ground Pepper to taste

Combine and blend in food processor.

*= some ingredient liberties have been taken

COOKING TIP: Next time I make this, I will only use one onion but keep the recipe for the batter the same. Also, the Fry Sauce is so good that you will want to double it.

  1. Yess! Onion rings are my favourite. Can’t wait to try this!

  2. Almond meal is usually rancid to beigin with. Then cooking with it, takes it further along that dark path. I substituted ground chia seeds for the almond meal, & added a pinch of Himalyan sea salt & some cayenne powder to the recipe. I used organic extra-virgin coconut oil to fry the Vidalia onions. Skipped the sauce & just used some Tabasco hot sauce. The chia seemed to bind the “breading” REALLY WELL.
