Paleo Stuffed Chicken



Thanks to Canada Girl Eats Paleo for this recipe! My Stuffed Chicken Thighs turned out great and I will be doing it again! The below recipe reflects my tweaks.


1/4 cup of cashews
1 small onion white onion
1 cup of spinach
6-8 chicken skinless, boneless chicken thighs
1/2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper

I will add one (1) teaspoon of minced garlic next time though…you can never have too much garlic!


1. Add all ingredients (minus chicken) into a food processor and blend until a smooth but thick paste develops.2. Add mixture to the middle of chicken thighs and fold over before securing with toothpicks.
3. Place Stuffed Chicken Thighs on parchment line cookie sheet and place in preheated oven (350 degrees) for approximately 40 minutes or until cooked.
4. Pairs well with salad and sweet potato fries.
