Meal Plan Week One

 The key to success is through meal planning and that is something I am beginning to work hard on.

WEEK ONE

Monday:
Steak (seasoned with Montreal Steak Spice)
Salad

Tuesday:
Sausage (no fillers)
Salad

Wednesday:
Chicken Souvlaki
Savory Cauliflower Fried Rice (this is a staple in our house…AMAZING RECIPE!)
Cucumber & Tomato Salad
Tzatziki Sauce (use So Delicious plain yogurt and add some lemon juice)

Thursday:
Cilantro Chicken Meatballs (the more cilantro, the better!)
Cucumber & Tomato Salad (great salad dressing that would be super on regular salads)

Friday:
Leftovers

Saturday:
Outback Restaurant*

Sunday:
Fool’s Gold (a very kid friendly recipe)
Sweet Potato Fries

*PLEASE NOTE:
We share the 16 ounce Herb Roasted Prime Rib with two sides (broccoli for him, salad for me). It may sound like we are being cheap (which we are) but it is also about portion control. Because we rarely dine out, when we do, I do not want to be in physical pain afterwards because I stuffed myself…I would much rather have a lower bill and enjoy my evening out.

The importance of meal planning

 

I think one of the biggest reasons why I have failed in the past is due to lack of planning. What better excuse to bypass homemade meals than lack of time?  I want to set myself up for success, not failure, and will begin learning the ins and outs of meal planning.  I have done this before and never stuck with it (do you see a reoccurring theme?) but taking into account my family’s tight budget and my drive to get healthy and lose weight, this time there are no other options. I need to stick to a meal plan.

Savory Cauliflower Fried Rice

Because my husband has been Paleo for over a year, I have tried many recipes. Some are deemed great, while others will never be made in our kitchen again. Cauliflower Rice falls in the former category and goes beyond. It is a staple in our house and hopefully will be yours. This is great solo, in a stir fry, served with butter chicken or a tasty substitute for rice and pasta.

Savory Cauliflower Fried Rice

1 head organic cauliflower – steamed

1/2 red onion – minced

3 garlic cloves – minced

2 tbsp fresh basil – diced

1 egg

2 tbsp coconut flour

1 tsp sea salt

black pepper to taste

3-4 tbsp coconut oil
