Double Chocolate Chip Muffins


My sister sent me this recipe the other day after receiving rave reviews from her co-workers, so I had to make them and try myself! These turned out GREAT! It took about 5 minutes to put the ingredients together, so it’s a very quick and easy dessert for those of you with a sweet tooth!

Yield: 11 to 12 muffins

3 very ripe bananas
2 TBSP coconut oil or melted butter
1/3 cup honey or maple syrup (I used 100% pure maple syrup)
1 egg
1 teaspoon vanilla extract
1 cup almond meal
1/4 cup coconut flour
1/3 cup cacao powder
1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup mini chocolate chips (I substituted and used what was already in my pantry: Ghiradelli 60% bittersweet chips)

1. Preheat oven to 350 degrees F.
2. Grease muffin tin or line with cupcake liners.
3. Mash bananas or mix with blender.
4. Add all ingredients (minus chocolate chips) together and mix well.
5. Add chocolate chips.
6. Bake for approximately 18 minutes. Since these are super moist, I let them cool down before eating.
