Breakfasts are always the “challenge meal” for me. Other than eggs & bacon, pancakes and quiche, the first meal of the day can become monotonous. So stumbling on an easy, tasty and kid-friendly recipe that can save precious minutes when you’re rushed, was a relief!
Eggs & Bacon Mini muffins are delicious and provide a full meal in a small package. My daughter and son love them, I pair them with some cherry tomatoes, while Jon heats them up an eats them up while driving into work. Next time, I am going to let my children make their own special batch, while I make a spicier tray for hubby.
Ingredients
6 eggs
2 Tbsp of bacon grease
3 green onions, finely chopped
1/2 teaspoon of sea salt
6 Tbsp coconut flour
1/2 teaspoon of baking powder
8 strips of bacon, cooked and crumbled
Directions
- Mix ingredients and dry ingredients in separate bowls and slowly combine.
- Add onions and bacon. Mix well.
- Use either a lined or greased mini muffin tray and fill 2/3 full with Eggs & Bacon batter.
- Place in preheated oven (400 degrees) and baked between 12-15 minutes.
- Let cool and then enjoy!
Other ingredient options: Customized this recipe and get creative. Add some red peppers (cooked), finely diced mushroom, finely chopped spinach, a little garlic, cayenne pepper, Goat Gouda cheese etc…
