Mikaela is so excited to have a baking project today! She’s making Paleo Newbie’s Carrot Cupcakes for the family to enjoy tonight I love encouraging my children to cook and showing them that the kitchen is not something to fear but enjoy (or at least tolerate).

Cinnamon Parsnip Cookies

Never had a parsnip before? Don’t know how to cook them nor the desire to try them…Well, I would have answered “yes” along with you before I ate my first Cinnamon Parsnip Cookie. The idea of taking an ignored root vegetable and turning it into a dessert seemed laughable but not anymore. Parsnip cookies, what a genius idea!

These clever cookies have a slight carrot cake taste combined with a pumpkin pie flavor and a soft middle…perfect with a cup of tea or as a school lunch goodie.

So go grab a few parsnips and treat your children to a healthy dose of  vitamins!

Frosting Chocolate Shots

Shamefully, I am one of those people that would buy ready-made icing, add a spoon and dig in. Needless to say,  I have a sweet tooth…a big sweet tooth! One of my concerns before dedicating myself to my new Paleo lifestyle had to do with sugar and how I would get my sugar fix.

Luckily, there are many fantastic desserts for those wanting to only eat gluten-free, whole food, Paleolithic treats and during the last year my family has  tried dozens of recipes. Chocolate Frosting Shots taste exactly like chocolate mousse but its healthy!

This easy to make, tasty treat was created by Chocolate Covered Katie and requires only four ingredients! So grab a can of coconut milk, cocoa powder, vanilla and honey and satisfy your sweet tooth without feeling guilt!
