Oven-Roasted Chicken

This is going to seem small to some but for me trying to replicate my step-mom’s chicken was daunting…until last night. Here’s her secret for super great oven roasted chicken. Add your favorite spice to chicken quarters (I recently discovered What’s This Spice Company), place on cookie sheet or baking dish and covered with aluminum foil. Bake at 350 for 45 minutes. Remove foil and increase temp to 400, bake for another 45 minutes. Then enjoy your perfectly golden chicken dinner 🙂

The Scale Says 50 Pounds

I started my Paleo journey over a year ago. There’s been lots of successes followed by relapses back into old lifestyle habits. It’s been a continuous cycle of losses and gains.  And as much as I protest against the importance of numbers, I am conflicted. On one hand, I get excited by decreasing numbers and find myself dreaming of seeing certain numbers.

While on the other hand, I know that I am more than the number that stares back at me on the scales. Unfortunately, that number equates to too many lost opportunities. It’s not consistent with what I want to achieve.

For me, numbers are the difference between being a participant in life OR being someone that hesitates and winds up sitting on the sidelines. It’s not about being a size 6. It’s about making my body stronger and living a fuller life where I can accomplish what I want because I am physically fit and completely capable of achieving whatever goal I set my sights on.

I look forward to the day when I don’t care what number appears on the scale because that means I am at a place in my life where I can:

•enjoy clothes shopping again •go hiking without running out of breath every few feet
•take Kayak lessons which I won’t do out of  fear of falling in the water because I would then struggle to get back into the boat
•go zip lining without thinking that the harness will break
•learn to mountain climb ~something both Jon and Mikaela love~ which I currently can’t do because of my weight and lack of strength

I am not trying to be a certain size. I am simply trying to uncover the person I always wanted to be.

50 pounds down, 100 more to go.

 

Chicken Fajita Salad with Guacamole

Super easy and super tasty! Tonight’s supper included leftover Jalapeno Dijon Grilled Chicken, sautĂ©ed yellow and red peppers (which were on sale) and half a purple onion. Topped with Wholly Guacamole’s Classic Guacamole. So delicious, even the kids ate it!

PaleoKim’s 21 Day Sugar Detox Journal Entry – DAY 17

OK – lets just get this out of the way – I CHEATED! I BIG TIME CHEATED! And I am not going to beat myself up over it. I felt bad about it for a bit but I am moving on and tomorrow is a new day that I WILL NOT cheat.
KIM’S BREAKFAST: Did not have much to eat before yoga – only some banola and half a cup of coffee.
KIM’S LUNCH: Raced home – only had about 45 minutes until the afternoon session so I ran home, fed the dogs, wolfed down some chicken and some salad, watched my husband put up our new shed then raced back to class. The afternoon session was filled with lots more yoga so my back is a little sore.
KIM’S SUPPER: This is it – are you ready? Today (meaning yesterday – Sunday) is the 7th anniversary of me being married to Non-Paleo Mark (together for 20 years) so we decided to go out for supper. I had a glass of wine (cheat) with a steak, Brussels sprouts, butternut squash, a couple of mushroom gnocchi (cheat – but they were small) and I split a gluten free cheesecake with berries with the man (cheat, cheat, cheat). Was it the worst cheat I could have done – No – but it was a cheat that was enough to throw my stomach out of whack the next morning for a bit.
FAMILY’S SUPPER: Same as mine!
SNACK: Are you kidding? Like the cheesecake wasn’t enough? There – I feel better telling you all about it…

PaleoKim’s 21 Day Sugar Detox Journal Entry – DAY 15

So today I worked 16 hours and I realized I am not as young as I thought I was! Still went to 6 am yoga and then to work. Stopped at Starbucks for a jolt to get me started!
KIM’S BREAKFAST: Haha grapefruit – who is laughing now? Not you – because you are in my stomach. Your 3 day sojourn ended today.
KIM’S LUNCH: Don’t pretend you don’t know wh…at I ate for lunch! If you don’t know just go back and check out any one of my other posts and chances are pretty good you will get it right!
KIM’S SUPPER: Since we were all working late, my team and I ordered out for Thai – I had Lamb in a lemongrass chili sauce with veggies. Instead of rice I asked for extra veggies! It was good but I am sure I will pay for it tomorrow morning when I start my Yoga Instructor training.
FAMILY’S SUPPER: Not sure since I was not there but I did see a Milano’s pizza box so I can only guess.
SNACK: Ate the rest of the Banola I made earlier in the week while I worked. Got off at midnight and have to be up for a day long training session – uggh – I am way to old for this!

PaleoKim’s 21 Day Sugar Detox Journal Entry – DAY 13

Why was yoga so hard today? I’m not sure either but it was – I had no balance. I blame the banola from last night.

KIM’S BREAKFAST: I had absolutely no time this morning to eat the grapefruit (yes I know – I should make time) so I ate some organic trail mix – don’t worry – no peanuts or raisins – it has goji berries and its called the Machu Pichu mix!)

KIM’S LUNCH: Ate some Jalapeno Dijon chicken and salad while I caught up on Sons of Anarchy. Oh Jax – how I love you.

KIM’S SUPPER: Went out for supper with some old friends and caught up on over 15 years of life! We went to Moxies and I ordered the herb crusted chicken with green beans, cherry tomatoes and instead of potatoes I asked for their seasonal roasted veggies which happened to be Brussels sprouts and butternut squash. In all fairness I have to mention that there was a medallion of goat cheese on it and I did eat it. I AM A CHEATER!! Well, not really, goat cheese is Paleo friendly…But everyone else was drinking wine and I stuck with water so I am feeling self righteous anyway. AND I did not eat the warm white chocolate brownie OR the pecan caramel cheesecake. Yes – very self righteous indeed!

FAMILY’S SUPPER: NonPaleoMark had to go to the dentist and based on the takeout bag, he stopped off at St. Huberts for some roasted chicken, fries and, even though he tried to hide it, a piece of sugar pie.

SNACK: No snack tonight – I came home too late and had too much writing to do!!

Pre-planned Breakfast Idea

Boy, things get lonely when 14+ hour shifts start! It’s just the kids and I, leftover supper, an attempt to walk at the park made (brrrr, too cold!) and some crafts tonight. One thing I have started doing is making breakfast the night before for everyone…That way if hubby (he’s up at 5 am every morning) doesn’t have time to prepare breakfast and is running late, it’s a 30 second zap and he’s got a nutritious plate of food ready to eat. Plus if I’m running late, or the kids decide to argue over clothes, tv, making their bed, brushing their teeth or just overall being pokey…well, it saves me

PaleoKim’s 21 Day Sugar Detox Journal Entry – DAY 12

Today is Tuesday (work with me here) and I am back in my weekly groove. Work is super busy this week so I have to make a point of eating my breakfast!
KIM’S BREAKFAST: So what seemed like a really awesome idea the night before was not so much a good idea when I came to eat it. Last night I thought I would get away from the whole egg thing for breakfast so I decided to make a tuna wrap with the new nori sheets I bought. I put in a tin of tuna, half a jalapeno, a cut up shallot, an avocado and mixed it with the juice of half a lime and salt and pepper. I then spooned a bunch on to two nori sheets and rolled it up and cut it like sushi – it looked so cute! Well let me just say that the taste and smell of seaweed is not something I find appetizing in the early morning. I ended up shoving it in my mouth before my management meeting and downing it with coffee. Will not make that for breakfast again!

KIM’S LUNCH: Had a working lunch with some work peeps to discuss the very important subject of our Christmas party – KLM productions (short for Kim, Len, Megan) are the Christmas party superstar production team that designs and delivers amazing Christmas parties for our Foundation. We went to an awesome Thai place and I had a cold mango salad with shrimp and pork with chili and lime. This completely made up for my crappy breakfast.

KIM’S SUPPER: Had a massage booked for what I thought was 5:30 so I gracefully got out of supper preparation (the coming theme for the rest of the week it seems). I showed up only to be told that my appointment was actually at 6:30 so I came back home, played Candy Crush (stupid level 37) and then went back. When I finally got home all sore and greasy from my time with Simon (oh that sounds so bad…) I made myself a couple of those Phenomenal Chicken thighs.

FAMILY’S SUPPER: Mark made himself chicken fingers – that’s it – just chicken fingers.

SNACK: None for me tonight thanks- ok – that’s a lie – I ate some banola! I still love that stuff!
