Thai Pork Chops (Slow Cooker)

Are you rushed each day and are running out of new recipes? If so, here’s an awesome recipe for Thai Pork Chops via a slow cooker. I make this weekly with 4-5 boneless chops and freeze them. It makes for a week of GREAT lunch. Pair it with raw broccoli (in a separate container) and when you’re ready just add an inch of water to the container, place lid loosely on top and microwave for 40 seconds…BANG! You’ve got freshly steamed broccoli and a main entrée to die for 🙂

1 cup chicken broth
1/3 cup Tamari sauce
1/3 cup almond butter
2 Tbsp minced garlic
3 Tbsp honey
2 tablespoons minced fresh ginger root
1 teaspoon crushed red pepper flakes or 1 Tbsp chili pepper paste
2 red or yellow bell peppers, sliced or diced
1 pound boneless pork chops

Place pork chops on bottom of slow cooker and pour remaining mixed ingredients on top. Cook on low for 5-6 hours. Pairs well with green beans, broccoli and Savory Cauliflower Fried Rice.
